What is saffron?

Crocus Sativus, also known as the saffron flower has a deep crimson-red colored stigma that is separated from the flower. These strands are called Saffron.

What is Kashmiri Mongra Saffron?

The stigmas that are separated from the flower have 3 parts which are categorized based on their color. The deep crimson-red colored portion is called Mongra, the pale yellow portion is called Laccha and the white portion is Zarda. The yellow and white portions are separated and removed as floral waste. The red portion, Mongra has all the active nutrients, medicinal properties, flavors, aroma, and color.

How is saffron harvested?

The saffron harvesting season starts in November. The saffron bulbs are cultivated in spring and the flowers start to blossom in autumn. The saffron flowers are plucked and collected after which the crimson red stigmas are handpicked and separated from the flower.

How many flowers make 1kg of saffron?

It takes around 150,000 to 200,000 flowers to get 1kg of saffron.

Where does saffron grow?

Saffron grows naturally only in India, Spain, Iran, and Afghanistan.

How to identify pure Saffron?

  • Appearance is thick from the head and gradually thin and uniform.

  • Only the deep crimson-red stigmas portion should be present. It should not contain any pale yellow or white portions.

  • The texture of the stigma should not be brittle.

  • It should not release color immediately when soaked in warm milk or water.

  • The taste of the saffron should be bitter.

  • The aroma should be strong.
